Mediterranean Couscous
with Roasted Garbanzo Beans, Zucchini, and Tomatoes

My daughter has been asking me to make a vegetarian* meal. I found this meal that was fairly simple to make and included things they’ve already eaten.

Ingredients

  • Couscous
  • Chickpeas (Garbanzo beans)
  • Vegetable broth*
  • Zucchini
  • Grape Tomatoes
  • Green Onions
  • Lemon
  • Garlic
  • Feta cheese
  • Thyme
  • Paprika
  • Salt
  • Olive oil
  • Butter

Kitchen items

I roasted the garbanzo beans with olive oil and paprika. The zucchini and tomatoes were roasted with olive oil and thyme.

While the veggies roasted, I started the couscous and chopped up with feta cheese and lemon.

I added half of the vegetables and half of the feta to the couscous. The remaining feta, veggies, and the garbanzo beans all went top of the couscous. Green onions on top. Varnished with a lemon wedge!

I cannot wait to try variations of this meal to find the perfect dish for my family!

*I used chicken broth because it was what I had on hand. This was not a truly vegetarian meal.
